Use Carnaroli Rice for tasty risottos, flans and fine dishes. Carnaroli is an Italian variety of short-grain rice used primarily in the preparation of risotto. Preferred by chefs, Carnaroli rice is high in starch and makes for for a creamier risotto while maintaining the shape of the grain. 

It has a small content of proteins and high values of lysine, an essential amino acid that helps produce antibodies. Eventually, Carnaroli rice has a very low allergenic potential and does not contain gluten: therefore it is suitable for people with coeliac disease and for those who suffer from food intolerance.

Carnaroli is an Italian medium-grained rice grown in the Pavia, Novara and Vercelli provinces of northern Italy.
